People will make a holiday out of anything, like tater tots for example. But hey, I'm not complaining. Not when it comes to tater tots! For me, tater tots are simply perfect. They're easy to make, packed with flavor and you can use them in countless ways. #nationaltatertotday

Tater Tot Dip
3 cups thawed tater tots
1 cup cooked ground beef (or vegetarian crumble)
2 tsp Mrs. Dash salt-free seasoning (or any all purpose seasoning)
2 cups Colby-jack cheese, separated
16 oz sour cream
1/4 tsp salt
Preheat your oven to 375 degrees F. Roughly chop your thawed tater tots.
In a large bowl, mix together tater tots, beef (or veggie crumble) 1 cup of cheese, sour cream, Mrs. Dash, and salt.
Place into a 9in pie pan and smooth top with a spoon. Top with 1 cup of cheese.
Bake for 30 mins or until cheese is golden and bubbly.
Homemade Tater Tots
What you'll need:
2 Tablespoons neutral flavored oil, like grape seed or canola
1 1/2 pounds russet potatoes, peeled and cut into rough 1-inch chunks
1 1/2 teaspoons salt
1/2 teaspoon onion powder
1 Tablespoon cornstarch
2 Tablespoons finely minced parsley, optional
1 ounce sharp white cheddar cheese, finely grated (about 1/3 cup)
Fresh ground black pepper
Heat Oven to 400 degrees F. Line a baking sheet with aluminum foil and grease with half of the oil
Place potatoes in a bowl of cold water and agitate for 10-15 seconds and drain
Transfer 1/2 of the potatoes to the bowl of a food processor and pulse until broken down into rough 1/4 to 1/8th inch pieces, about twenty-five 1-second pulses.
Transfer to a clean dish towel and repeat with the remaining potatoes
Wrap dish towel around processed potatoes and squeeze well to remove as much liquid as possible.Discard liquid and transfer potatoes to a medium microwave-safe bowl. Microwave for 1 minute, stir and the microwave for one more minute.
Stir potatoes--they might be a little sticky--then let cool for two minutes. Spirnkle the salt, onion powder, cornstarch, and parsley, cheese and a few grinds of black pepper over the potatoes. Gently mix in to combine. The mixture will be sticky, a rubber spatula or fork work well.
Bake Tater Tots
Shape potatoes into cylinders about 3/4 inch wide and one inch long. Place shaped tater tots onto oiled baking sheet.
Drizzle tops of tater tots with remaining oil then bake until golden brown on the bottom, about 10 minutes. Carefully flip each tater tot--using two forks helps to wiggle any tots that are more stuck to the foil than others--then bake until the second side is golden brown, another 10 minutes.
Buffalo Tater Tot Bites
5 TB butter
2 TB Frank's Red Hot sauce
2 TB honey
1 16 oz bag frozen tater tots
1 inch pieces of celery about 2 large stalks
3-4 oz of blue cheese chunks
Start by preheating your oven to 425 degrees. In a medium sauce pan, melt butter over a low heat. Once melted, stir in hot sauce and honey. Remove from heat.
In a large bowl, toss tater tots in 3-4 TB of hot sauce mixture.
Bake tater tots for 30-35 minutes until golden. Skewer tots with a piece of blue cheese and celery, and drizzle with remaining sauce.
Mexican Tater Topped Casserole
What you'll need:
1 lb. ground beef
1 onion, chopped
1/2 green/yellow pepper, chopped
1 celery stalk, chopped
1 Tablespoon cajun seasoning
1 teaspoon chili powder
salt and pepper to taste
1 can 11 oz cream of mushroom soup
1 cup creamed corn 1 small can
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 package or 16 oz tater tots
1 1/2 cup shredded Mexican cheese blend
1 green onion, chopped
1 small tomato seeded, chopped
In a Dutch oven cook the beef, onion, pepper and celery over medium heat until meat is no longer pink; drain if necessary. Stir in spices such as salt, pepper, cajun seasoning, chili powder, and cumin. Stir in creamed corn, cream of mushroom soup,oregano and half of the cheese and bring to a boil.
Transfer to a greased baking dish and top with tater tots. Cover and bake at 350 F degrees for 30 minutes. Sprinkle with remaining cheese and bake for another 15 minutes or until slightly golden brown. Top with chopped tomatoes and green onions and serve
